Cookies and Cream Cupcakes (Vanilla Oreo Cupcakes)
Vanilla cupcakes with an Oreo buttercream, topped with an Oreo biscuit
Cupcake recipe:
- 125g self-raising flour
- 125g sister sugar
- 1/4 teaspoon bicarbonate of soda
- 125g unsalted butter softened
- 2 eggs
- 1 1/2 tablespoon milk
- 1/4 teaspoon vanilla extract
Method:
- 1. Preheat oven to 170c/Gas Mark 3
- 2. Use all in one method to mix ingredients
- 3. Scoop into cupcake cases
- 4. Bake for 20-22 mins
- 5. Leave to cool for 5 mins then transfer to a wire rack to finish cooling
Buttercream recipe:
- 150g unsalted butter softened
- 340g icing sugar sifted
- 3-4 tablespoon milk/other liquids
- 1/4 teaspoon flavoring
- 1/2 pack of Oreos, crushed
Method:
- 1. Beat butter until pale and fluffy
- 2. Add half of the icing sugar and mix for 60 secs
- 3. Add remaining icing sugar and mix for 60 secs
- 4. Add milk and flavoring gradually (may not need all of the liquid)
- 5. Add Oreos and mix for a further 1-2 mins
