Cookies and Cream Cupcakes (Vanilla Oreo Cupcakes)

Vanilla cupcakes with an Oreo buttercream, topped with an Oreo biscuit

Cupcake recipe:

  • 125g self-raising flour
  • 125g sister sugar
  • 1/4 teaspoon bicarbonate of soda
  • 125g unsalted butter softened
  • 2 eggs
  • 1 1/2 tablespoon milk
  • 1/4 teaspoon vanilla extract

Method:

  • 1. Preheat oven to 170c/Gas Mark 3
  • 2. Use all in one method to mix ingredients
  • 3. Scoop into cupcake cases
  • 4. Bake for 20-22 mins
  • 5. Leave to cool for 5 mins then transfer to a wire rack to finish cooling

Buttercream recipe:

  • 150g unsalted butter softened
  • 340g icing sugar sifted
  • 3-4 tablespoon milk/other liquids
  • 1/4 teaspoon flavoring
  • 1/2 pack of Oreos, crushed

Method:

  • 1. Beat butter until pale and fluffy
  • 2. Add half of the icing sugar and mix for 60 secs
  • 3. Add remaining icing sugar and mix for 60 secs
  • 4. Add milk and flavoring gradually (may not need all of the liquid)
  • 5. Add Oreos and mix for a further 1-2 mins
