Perfect for any occasion, even to include in your children’s lunchbox. In this recipe, we use a generous serving of chocolate chips that give the special touch to these keto cookies and turn these cookies into one of the best keto desserts with almond flour that you can eat.

The primary ingredient to get the correct texture for cookies is xantham gum.

What is xanthan gum/xanthan gum?
Xanthan gum is a natural additive, sold in powder form and can be used for various purposes: thickener, stabilizer, emulsifier, suspension agent, salad tray, sauces, instant products, desserts, pastries, products, and dairy products.

  • 1 and a half cup almond flour. I recommend the Bobs Red Mill Super-Fine Almond Flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon xantham gum. I recommend the Bobs Red Mill Xantham Gum
  • 1/4 teaspoon of salt
  • 3/4 cup erythritol. I recommend Lakanto Monkfruit Sweetener (White)
  • 3/4 cup chocolate chips. I recommend Lily’s Chocolate All Natural Dark Chocolate Premium Baking Chips
  • 1/2 cup sautéed melted butter
  • 1 egg


  • Preheat oven to 160 µc (325 ºF).
  • In a large bowl add the almond flour, baking powder, xantham gum, erythritol, and salt. Mix for a few minutes making sure you integrate all the ingredients.
  • Add the egg, melted butter and beat for several minutes. Add the chocolate chips and integrate them into the dough.
  • With a scoop of ice cream, take 8 to 10 servings and place them on a plate with waxed paper.
  • Bake for 20-25 minutes. Let cool and eat!
