Peel the onion, carrots, celery, and garlic and chop in small dice. Heat a little olive oil in a casserole and poach the vegetables over low heat for 10 minutes. Add the bay leaf and tomato concentrate, stir another five minutes.

Add the soy sauce and the chopped tomato, season to taste and cook over medium heat for 10 minutes. Add the cooked lentils, washed well and drained if they are from the pot, together with the vegetable stock. Raise the heat and let reduce to taste. Finally, remove the leaves from the thyme and oregano branches, chop them and add them to the sauce when serving.
